While not demilitarized in the purest sense (they where build for the civilian market post WW2) the NSU Kettenkrad was used in rather large (> 500 units) number by fire departments and forresters post WWII.

Though Charles' scratch building efforts put mine to shame I will include my "in progress" attempts at converting the Russian Scud missile TEL into the civilian AA60 Airport Fire Truck.

It takes something REALLY large to make an M26 (Dragon Wagon) tractor look small!

Something like a Saturn 5 Main Stage booster rocket!

Exactly my thought! Also the new Modelcollect one in 1/72 might be a less cost intensive alternative.

Such pics probably exist, but I believe they're harder to find Production of trucks like the Opel Blitz started again after 1945, so one has to sort out wartime trucks from postwar ones...

For instance, here's a 1948 Mercedes-Benz L701 (licence-built Opel Blitz) :


Anyway here's a Bussing-NAG that looks like a demilitarized one...



and an ex-military Opel Blitz bus used by the Deutsche Post (1946) :
