I seen a video build with Academy's Hetzer. Looked really nice.

I second that. Hassle-free build.

if you can find one, the Eduard Hetzer's are far better. Come with a full interior and power pack. They did an early and late versions.
Have often wondered if you could combine the Tristar 38T (or one of the other kits off that chassis) with one of the main stream kits to build an even better one.

The Hetzer chassis was slightly wider than the 38T's so you may have some fit issues or gaps.

Keep in mind this was based on kits available in 2007, before Academy released their early and late, and before Dragon started their new series of Hetzer's and variants, so you might want to check for more recent comparisons although the Tamiya sounds decent enough.

The Hetzer and 38t shared virtually no parts. The lower hulls are not the same and the wheels are not the same size. The Hetzer's road wheels are larger diameter. Combining them wouldn't really gain you anything.
The Tamiya kit is by far the easiest to build but not the most detail. Tamiya tends to trade ease of assembly for finesse of detail. The Eduard one is nice, I have a couple of them in my stash. I'd look hard at the Academy kit too.

The Academy Hetzers are lovely little kits. Absolutely no issues, separate track links and can be had for very little money.

Tamiya or Academy; built the older Tamiya one some years ago and would gladly do another; if I ever get hold of the Academy one I'd like to try it especially since it has the link-and-length tracks (the Tamiya I built has the old "rubber-band" tracks; but they worked just fine); the newer Tamiya (see post above) is a good kit

I recently finished the Academy Hetzer. A good solid, easy, and fun build. A little light on some details, but overall builds into a great kit.

Does dragon offer a relatively recent hetzer? I thought theirs date from the 1990s. They have a bunch of new 38t derived vehicles, but I am not aware of new hetzer..

Their unconventional Hetzers, which are really self-propelled this and that; 2cm flak, 7.5cm howitzer, 15cm howitzer, seem to be based on old Hetzers. I'm just starting the 2cm flak version and you can tell from the thickness of the plastic, the thickness of the sprue attachments, and experience with their more modern 38t variants and other kits, that they didn't do a real update on the basic vehicles. It would have been great if they did, especially given the prices. This is my second consecutive Dragon "old and new" kit and I'd really, really prefer it to be all new or at least updated.
