I had great luck last year, so I'll play,
Vickers A1E1 Independent
MK I Matilda
Canadian Ram
T-72AV I can't believe this version has not been done yet, they are in combat right now, I don't think you can get more relevant than that, and they've already got the base kit!
Have to agree with Matt on these:
ARL-44 (come on Tamiya, do something weird, you already have the tracks!)
Black Prince
Arjun
Al Khalid
How about a DD Sherman, and the TOG II to round out the list

My list gets smaller and more esoteric every year but one kit still remains elusive:
The Daimler Armoured Car in Mk 1 and II
followed by:
DD Sherman (M4A1 so we can adapt it to the Sherman III)
The Ferret Family
RAM tank family (kangaroo)
Valentine Bridgelayer
Covenanter
Centurion Mk 1 - 111
Churchil Bridgelayer
Centurion Bridgelayer
Alvis Stalwart
FV 434

1/48
Pretty much everything because there is comparatively little selection, BUT to pick a few subjects I'd like:
* Comet (good luck finding one of the Fighting 48th ones)
* Chieftain
* Ram II
(I expect when I get around to making a Comet or Chieftain I will have to abandon 1/48. Such is life!)

Here is what I would like to see, I doubt I will ever see many of those in the first category though I would like to see them nonetheless.
Kits that have never been produced in plastic (1/35)
Matilda I
Cruiser a9
Panzer II (a,b,c) the versions with the six small road wheels
Panzer 38(t) ausf. A
Panzer 38(t) ausf. C/D
Lt40
R1 (Romanian Calvary tankette)
T27 tankette
Renault d2
IDF Centurion, six day war version with 105 L7 gun and extended rear fuel tank
Kits that have been produced previuosly but could really use an upgrade, 1/35 scale
7tp
Tk3
BT-5
T26 model 1940
Vickers six ton E model (Finnish version with upgraded gun)
T72m1
For the aftermarket I would also like to see
Kv series early (pre July 1941 production) tracks
More early war soviet tank crew figures
More Cold War era NATO and Warsaw Pact figures

To be honest I'm quite surprised you don't have M551/M551A1 in your, otherwise very comprehensive, list
It is still on top of my list. The only other thing I REALLY want now is an accurate M3/M3A1 Stuart kit. There is a lot of other models that I would be glad to see released, but Sheridan and Stuart are two that I really, really want.

I'd like to see a T23. It's the missing link between Sherman and Pershing and all the Pattons that came after it.
Besides that, Cold War German stuff (east and west) would be most welcome too.

We've been - and still will be - generously served with a whole host of nice new kits these past few years. Still, there's a few things I'd like to see happen in plastic 1/35.
- Cruiser A27 Cromwell: Tamiya's kit is a nice basis, but has been around a long time. A newly tooled Cromwell and Centaur would be most welcome.
- T-34's: There's a lot of T-34 kits out there but most of them suffer quite a few flaws in one way or another. With better access to Russian source material a company like, oh lets say Miniart (who coincidentally also have about half the tooling done with their SU kits) could do well to make a series of T-34's like their T-44/T-54 series. A hard-egded hexagonal turret OOTB would be nice too.
- Renault D2: 'cos it's French and French tanks are cool
- FCM 36: see Renault D2
- Hotckiss Canon 25mm Mle.34: see FCM 36. Also this could be a short, easy and fairly inexpensive build that would make a good diorama filler.
- Citroen T23 truck: Not only used by the Trench, but also extensively used by the Germans. Might look good in a civvy finish too
- Topol-M
- Iskander 9K720
