What I found that works really well, and is easy to acquire and easy to use, is the shiny foil one finds on the inside of most candy / protein bar wrappers sold in the US. Just trim it to fit the mirror or, the inside of headlights prior to putting the plastic "glass" on. I attach it using white glue.

Yes, this is what I do. In Australia snacks like crisp (Potato Chips) packets are foil. I press the foil into the mirror frame to get an impression that you can trim with a scalpel and ruler or punch out with a punch or drill bit end the right size (sandwich the foil between two thin pieces of styrene to punch. A little PVA (White Glue) thinly spread holds the foil perfectly and allows you time to position it correctly, unlike self adhesive.
My almost complete Otter with both mirrors done. You can see how reflective it is in the blue one to the right. The left unfortunately is a bit blurred as it is reflecting the weathered finish on the car.

The only thing missing is a tommy or a digger shawing in front of one of the mirrors. Knife in hand, shawing lather on half the face, towel over his neck ....

Nah, he has finished the ablutions and is now chillin' out with a fag. His beret and book are on the front engine covers - you can just see them through the flap opening in the pic. These are the details I'm finishing off, plus a few more to go on the blanket on the fender.

The candy wrapper mylar is much more reflective than any of the die cut mirrored stickers offered in the after market world.

Remember what your seeing in a mirror is a reflection of the surroundings. Chrome, shiny silver is exactly that. Maybe go for a very light blue colour to mimic the atmosphere around it.
