Very well done!
One question though: Didn't those contraptions need any stabilising legs? Since it looks as if the bucket could be swung out sideways almost 90 degrees?

Yes, it definitely would need to be stabilized. I have seen period pictures of makeshift solutions such as rail ties placed under the car toward the front and rear of center as well as welded stabilizers but either way, that is the next step.

All it would require would be multiple I beams built into frame pockets that slide out horizontally on the front end and also in the middle of the car. The crew would built up pillow block supports under each one using scrap lumber.
Just like under the AF and Lionel crane cars.

Got the stabilizers done. They flip in and out as I saw some train wreck recovery locomotives use. Took a while as I had to wait on some styrene pieces. They are made of brass, styrene and metal. Another issue is the building where I work on the Dora has no heat nor air conditioning. It sometimes gets down to -10 celsius in there. My fingers don't do what I tell them to do and the paint and glue I use start to act really strange at those temperatures. I still need to add some clutter and figures which comes next.
