Probably because the studio model was made from model kits on the shelf at the LHS. If you look at this photo, the two 6-holed triangular tube objects forward of the guns are the turret ammo racks from the old Tamiya M36 Jackson tank destroyer (parts A27 and A28).

The rest of the studio model consists of similar items.

Have a look HERE

This website is dedicated to the Millenium Falcon. There is a lots of stuff about making one and numerous pics of model sprues to help building one.

Also the two long items with the non-slip grid on them that sort of do a raised bump are most likely the fenders to the Italeri Elefant or Tiger (P) kit.

You could spend your life on this one!

Can you make the links live to make searching a bit easier?

Some initial observations:

In the first pic linked in your initial posting, the frame bottom centre of the shot is from the Tamiya 25pdr (it's the carrier for the traversing table)

In the pic shown in Sabot's posting, the angular grey piece set on the red oxide strip is the back end of a Valentine tank (probably 1/72 or 1/76 from either ESCI or Fujimi)

I found the exhaust manifold I mentioned at FSM. It's seen in the 5th picture under the 1/2 Tamiya Ferrari 312T. There are 5buy it now oprions on Ebay ranging from $65 to $105.

Given what that site offers, you shuold be able to identify most of the parts. However, the site also impossibly lists the DML/Dragon 1/35 Kettenkraftrad as providing parts. Impossible. The kit was realeased at least 20 years after the original movie. Not to mention the MPC Star Wars kits!
